There is no inherent conflict between "under" and the verb "mature." I can't be entirely sure about the full meaning without having more context.

: "Fl*ou*rishes" or "thrives" sound best to this American ear. *Unless* the context actually calls for "matures," in which case "ripens" or "comes to fruition" work very well.

I think it is ok in this sentence as you think of plants maturing or ripening under the sun.

but I would use ripens!

if you want an alternative to "matures", which is fine, but perhaps not the best choice in this context.
Also blossoms, ripens, flourishes, etc. You're spoilt for choice on this one!
