I always viewed polling as just asking someone who they would vote for, either before the election or just after they left the voting place.
A mock election is where you take some homogeneous body, say, a group of high-school civics students, have them give speeches in favor of their candidate and then have the class vote for the chosen person.

real polling and a partial / checking poll
poll especially in this context means polling during the proper election. sometimes to predict the result, a random number of people who represent different crieteria - income groups, racial backgrounds, jobs, etc - a sample population will be asked to cast their vote in a pretend election. the result of this elction is supposed to give a good ideal about the mood swings and possible outcome of the election.
