Dear colleagues,
I’m not sure about the meaning of ”which” in the sentence: “how an oxygen molecule was added to a trimethylamine molecule by an enzyme, ** which ** we were desperate to find in the kidneys and liver”.
I guess it refers to the “enzyme”, but I was wondering why the sentence begins with "how"? Did their work focus on the whole mechanism or specifically on the enzyme? My doubt derives from the fact that in a previous book, the same author says: “As a college student 15 years earlier, I worked in *** a biochemistry lab searching for the enzyme *** that could enable salmon to transition from fresh to salt water.”

I majored in biochemistry and did my honors research on chemical reactions in fish that enabled them to move to their new saltwater surroundings after hatching in freshwater.

I had thought it referred to the whole mechanism, but I changed my mind.
"How" actually means "The way". Here I replaced "How" with "The way":
The way an oxygen molecule was added to a trimethylamine molecule by an enzyme, which we were desperate to find in the kidneys and liver.
You want to "find" something, and you want to "find out" how something is done.
If the author meant the whole mechanism, he would have to use "find out".
