Estoy confundida con los distintos cortes de carne.

El documento que estoy traduciendo dice así:

"Grilled top rump sirloin steak served with rice, beans, vinaigrette sauce, yucca, and French fries. $58 (serves 4 people)"

Sirloin = solomillo y sirloin steak = filete de solomillo

Hasta ahí voy bien, pero entonces... he encontrado distintas variantes para rump y top rump:

contra
culata de contra
tapa
contratapa

Y la verdad es que estoy muy confundida. La carne no es lo mío, definitivamente. Ah, y tiene que ser para el inexistente "español neutro", por supuesto. :(

María Teresa The issue I have posting is that Mónica has already posted something, and I really don´t have any idea what your preferred term is, i.e. whether to stick to "picaña" or "(tapa del cuadril" http://dle.rae.es/?id=BPtoP9Z) as there are some who object to the use of "tapa del cuadril" reasoning that it is not perhaps neutral enough. For these reasons, go with Mónica and gloss according to your preferred choice. Thanks anyway.

¡Gracias, Taña! The source document is from the United States (a resort in Orlando, Florida) and the target audience is... "neutral Latin American Spanish" speakers (I know...!)

However, I should have said that the menu is for a Brazilian-Italian fusion restaurant and this particular item is called Picanha -- a Brazilian cut, so now we have three languages into the mix with Brazilian Portuguese apart from US English and "neutral" LA Spanish!

Ojo: This may just be for Uruguay. Literally, every country or region has their own terminology. If you give us your source and target countries, that I think would help narrow down your choices. The ProZ meat glossary (there is one may help you too). I'll try to find the particular glossary and post.

Explanation:
Beef is cut up differently in Uruguay and this particular cut is similar to rump but, instead of being a thin slice as in normal steak, it is a 'chunk' of rump.

Debería ser cortado en trozos de 200 a 300 g. El ***biftec del solomillo*** plano tiene en el caso ideal un borde de grasa blanca en el lado largo. Antes de asar se corta es trozos de aprox. 1 cm de ancho. Por eso el biftec no se comba al asar o asar en la parrilla. Si se compra un pedazo de solomillo en pieza en la carnicería, se corta primero la capa de grasa antes de cortar los filetes en diagonal. Justo lo suficiente como para que la carne se debe entrever en la capa de grasa. Así se ahorra el trabajo de cortar cada filete.]

I don't care what you have not seen in Chile. It is from the United States (a resort in Orlando, Florida) and the target audience is... "neutral Latin Am. Spanish". Menu is for a Brazilian-Italian fusion rest. /I object - post is a ref./ also have picaña!
