TO PORTION: (yields 10 - 9 oz. portions)
1. Using a gloved hand, place nine (9) ounces of cooked pasta in a bag and twist closed.
2. Place bags in a large food storage container, date and store in walk-in.
3. Shelf life of cooked pasta is three (3) days.
Line Cook
1. Store the pasta portions on the grill line in the reach-in refrigerator.
2. When an order for pasta comes into the kitchen, place the bag(s) seam side down on a clean plate and microwave for:
1 serving 2 minutes
2 servings 3 minutes
3 servings 5 minutes
