Spectroscopy is fundamentally based on the incidence of a ray of light on the sample, which makes the molecules vibrate, and we obtain a spectrum of the vibration of those molecules. Therefore when we focus on a pure food, we have a pure spectrum of it. When we spot an adulteration, the spectrum of vibration of the molecule bands is different.

another way of saying it - the "incident light" is the incoming light that gets either refracted or reflected.

HERE "the incidence of a ray of light on the sample" is about aiming the light at the sample [светло "упада" у узорак], or another way of saying the same thing more clearly would be "exposing the sample to the electromagnetic radiation in the visible spectrum (= to the light)"

By measuring the angles, we can determine the wavelength of the incident light.
The device converts ten times more of the incident light into electricity than a conventional solar cell.

: technically correct, but in this case it can be expressed more clearly in a different way.
