Retail stores (in the USA) that sell music scores, whether for solo instruments, or ensembles, usually use the term "Sheet music" to refer to all such scores, even when they're not just on unbound sheets of paper, but bound in book form.

We call the separate sheets "παρτιτούρες" in Greek. (parti'toores). This is in the plural, referring to many musical pieces. For one piece you'd say "παρτιτούρα".

I can't think of a term that applies both to separate sheets and to books.
