There are two ways to turn a sheet over: from 'side to side' (as when turning the pages of a normal book) or 'top to bottom' (like turning the pages on a wall-calendar).

'from gripper to back' refers to the second method. I don't know the proper French term - if all else fails I suggest 'tête vers queue'.
