I think I agree with meirs that Z is the depth (profondeur), but in the context of signal detection it may also be the Z-score, which is the number of standard deviations between the two signals. Since the context is not crystal-clear, you should ask the client.

I think Meirs is right Z is the depth dimension, the 'extra' one that makes these systems special.

Presumably, different sampling intervals or display techniques can be used to give differing degrees of prominence to the depth dimension of the image, depending on specific requirements.

Z is the depth dimension Where X and Y are resp. width and height (usual 2D dimensions). I would leave as Z - or use something like profonditee (no sure about FR spelling)
