: Both "玩" and "開始" are correct; but if you only want one and only one answer for the word, "開始" suits all your examples.

Play in "Play Menu" seems to be a noun and mean "游戏" here.
So basically, the verb means "玩" or in this context "开始" and the noun means "游戏". Just my two cents. :)
