In psychology, mercurial means "volatile" (can change back and forth). Volatile is: marked by erratic changeableness in affections or attachments ("A flirt's volatile affections").
This behavious is likened to mercury because mercury has no stable/fixed shape but rather changes from one shape to another all the time. زئبقي is OK.
