It depends on whether you want a translation or a parallel Arabic saying
If you just want a translation, then try
المسـتقبل لم يُحـبَّر بعد
("The future has not been inked yet.")
If you want a parallel Arabic saying, then be aware of the theistic shift. I am not aware of a traditional Arabic saying that emphasizes the secular humanist element (that man creates his future), But there are several sayings mostly emphasizing the unknowability of the future, and calling for the seizing of the present moment, such as:
ما مضى فات والمؤمل غيب، ولك الساعة التي أنت فيها
or the Arabic translation of one of Omar Al-Khayyam's quatrians:
غد بظهر الغيب واليوم لي، وكم يخيب الظن في المقبل
And so on.

The second goes:
Tomorrow is unknown, but today is mine. What comes next often disappoints.

the literal translation is :
المستقبل غير مكتوب
but this doesn't make much sense, if it meant here that it is immpossible to know what will happen tomorrow we can say:
المستقبل (او الغد) في علم الغيب
or
لا يمكن معرفة ما يخبئه القدر
about the idea to always be prepared for the worst but hope for the best, there is a famous phrase we say here which is:
اعمل ليومك كأنك تعيش ابدا واعمل لاخرتك كانك تموت غدا
to be always optimist we can asy
تفاؤلوا خيرا تجدوه
it means hope for the best and you will find it (hidden meaning:although you don't know what will happen)
