I think 难不倒 can be used in quite a number of ways, can\'t it?? Here are a few more suggestions I found in the dictionaries:

(某事情也)难不倒你 = it won't faze you; you won't be fazed by it; to be unfazed by sth

I have never used or heard this expression 难不倒, but it made me think of 'faze':

faze (informal) = to surprise and worry someone eg No-one is fazed by the sight of guns here any more.

-> the sight of guns here 已经难不倒大家. ??

The core meaning of the phrase is: refuse to be deterred.
Emphasizing (1) how easy the task is, or (2) how one ignores or slights the difficulties, it seems to me, miss the bull's eye.
For the task might not actually be easy, and one's attitude toward the difficulties might still result in backing down or withdrawal.
