Thank you Mokhtar and Alexander for your suggestions. I believe it is "عطر الجنادل" = "perfumes of waterfalls".

balm of Gilead? Would have a theological ring (being the Old Testament phrase for a soothing ointment). But I think the idea of ‘attar of Jadal [as in ‘strife, contention?’]’ here (especially if it’s extracted from gazelles) is that the subjects of the poem prosper by sucking the life out of others by exploitation, right? If so, something like ‘by grinding [insert some noun]’ might be best, as in “What mean ye that ye beat my people to pieces, and grind the faces of the poor? saith the Lord GOD of hosts.” (Isaiah 3:15)

I searched Lisan-al-Arab, Mukhtar-al-Sahhah, and Hans Wehr and there is no fitting word for the context. If you look at the Qafia, جادل does not rhyme with the rest (المداخل الشمائل النوازل الزلازل) but جداول does rhyme so I think it is a typo.

"Perfume" can be used as a verb.

Correction:
I just heard the correct version of the poem on YouTube in Al-Shaykh Mashari al-Affasi's own voice:

The correct word is جنادل meaning small waterfall or cascade so the translation would be as follows:
... devoted to their religion while their blood perfumes the cascading waters...

Thank you Lucinda and your effort is really appreciated. I thought it was brook (small stream) but the word "جنادل" makes sense. I would translate the verse as: Holding fast to their faith (Islam) And their bloods perfume cascading falls
