Spanish term
Máquina de vacío al 100%
Spanish to English
Social Sciences
Food & Drink
Hi,
I'm working on a recipe and it talks about placing the food in a "máquina de vacío al 100%."
Retirar las burbujas de aire incorporadas a la mezcla introduciéndola en la máquina de vacío al 100% o dejándola reposar durante 8 horas en el refrigerador.
Any advice is much appreciated!

Máquinas para Cocinar al Vacío - Sous Vide Machines

The "sous vide" part of sous vide cooking refers to the vacuum-sealed bags that are often called for when you're using the technique. (The French phrase literally means "under vacuum.") However, these days, when someone says "sous vide cooking," they're generally referring to any kind of cooking that takes place in a precisely temperature-controlled water bath, whether you're actually using a vacuum-sealed bag or not.

The air bubbles incorporated in the mixture are removed by placing it in the vacuum machine at 100% or leaving it to stand for 8 hours in the refrigerator.

Chamber vacuum machine set at 100%
According to the article I cite, removing the air bubbles improves the flavour of the food.
Example sentence:
... we ... had a chamber vacuum machine on hand and were eventually able to remove the air bubbles.

: Ithink this is it! Asker's context makes makes no mention of actual cooking with the machine, but instead of removing the air bubbles. A sous-vide is in fact used for the actual cooking, afaik

vacuum sealer at full pressure
a vacuum sealer would take out the pressure; the 100% could refer to "full pressure"

This can sit until cabbage, onion and apple is wilted (which may require overnight), be heated and chilled or put into a vacuum sealer under full pressure (twice to get full effect).
Discussion
BUT, if that is the case, I'm still not sure what the "al 100%" could refer to...
OOPS! this was in reply to a comment that has since been removed!
However, if it is indeed a sous-vide m/c then, like many culinary terms, the original French is exactly what would usually be used in English. My doubt is based on the fact that the machine in question appears to be being used simply to remove bubbles, and not for the actual cooking, which is what I understand a sous-vide is used for. Cooking extremely slowly...!
Perhaps Asker could supply clearer context...? What exactly is the machine being used for: removing air bubbles; removing bubbles and then sealing; or removing bubbles and then cooking very slowly?
I took this out of the Agree section, as a Neutral can at times look more negative than intended
