Certainly "fábrica" can refer to brick or stone as a construction material:
"2. f. Construcción, o parte de ella, hecha con ladrillos o piedras naturales o artificiales, entrelazados entre sí con mortero. Una estantería de fábrica."
But here it's just a synonym of "edificio".

: If it said "uno de los ejemplos más interesantes de fábrica de ladrillo", I'd agree, but there's no reason to think "fábrica" refers to brickwork here. Your ref. is to a twentieth-century addition to what is basically a stone-faced building.
