I wonder if anyone can help with the right term in English for 'rilievi' in this context:

Esecuzioni rilievi
Il nostro Ufficio Tecnico si avvale di Interior Designers e personale specializzato che, con strumentazione di alta tecnologia, effettua rilievi al millimetro.

Would 'survey' be the right term here, or would something like 'site visit' be more appropriate?

doing a survey of course entails one or more site visits, so there's no reason to say that. Similarly, it entails taking measurements (and doing other things) so there's no reason to say that either.

I don't think there's one "official" translation, you will find all of these used indiscriminately.

Topographical survey

A possibility, as this covers measurements focusing on the variation in levels AND reliefs.
Example sentence:

"A TOPOGRAPHICAL SURVEY or land survey is an accurate representation of the area of interest showing all natural and manmade features with levels. Shown as three dimensional points all features including the property, land features and physical ..."
