Zwischenfrüchte are crops like phacelia, alfalfa, clover and lupins that are used between cash crops for improving the soil. For instance, by binding nitrogen .
The green, above-ground, parts of these plants are removed for processing as silage or in biomass gas plants and the roots that bind nitrogen into the soil are left in as soil improvers.
The green parts could be left to rot as green manure if the soil is deficient in humus. The problem with this is that the decomposition process takes too long and the field would lie fallow for longer periods before the next crop can be sown

2) carted off - taken directly to market

BTW: Silage is fermented, high-moisture stored fodder which can be fed to ruminants (cud-chewing animals such as cattle and sheep) or used as a biofuel feedstock for anaerobic digesters.

: I think you are right. This is not about the actual harvest but about cleaning up and removing the leftover biomass like stalks, leaves, stems,...

: I also think that "removed from the field" is the right answer. If the catch crop is not removed from the field, it has a nutrient value for the main crop, which should be considered for the fertilizer requirements.

: One can view the harvest in 2 phases - the actual cutting/gathering/threshing and the removal. That fits all 3 as well - the catch crop, the main crop and the residues. It's becoming more common to remove residues for ethanol production.

Seems like it's a process in farming, to a degree.

: Even the main crop may at times be plowed under or burnt, especially if weather conditions resulted in a poor performance. It is then cheaper to write it off. So yes, that differentiation is also necessary for the main crop.
