I'm pretty sure the same term is used in both EN and FR. It means changes, and presumably derives from the mathematical use of the Greek letter Δ (delta) to represent a change in some factor etc.

'difference'and 'deviation' are both certainly possibilities — though the latter might need to be used with some care, as it might not necessarily fit in all instances.
