Agree with Hilary and Susanna: 'darn' is not a common term on menus, darn it!! :-)

Darn - why? I'm with Hilary - although obviously literally correct, it wouldn't be my choice to use on a menu.

This is a fillet, or bone-free cut of salmon. It's a wedge shape, and in my experience, the kind most served in restaurants.

In Italy a 'trancio di salmone' is usually precisely that, cut through the backbone.
