"Shear pin" = "goupille de cisaillement" (http://www.granddictionnaire.com/BTML/FRA/r_Motclef/index800...

Since a "goupille de cisaillement" has not exactly the same meaning (and not the same operating principle) as a "clavette-fusible", I suggest fusible key (see web references below).
