I found this, funny enough, by looking at IATA where I found this use http://iate.europa.eu/iatediff/FindTermsByLilId.do?lilId=159... which is "overslaande of brekende golf" e.g. a breaking wave. Wondered if it was also used for voices, and there it was...

: Peter, a breaking voice is exactly the phenomenon your refs describe: changing voice characteristics in adolescence. That's not the same as 'overslaande stem', which is the phenomenon of temporary voice change under stress or emotion (but please see PS).
