The subject is ski clothing (in this specific case ski overalls).
I have googled "pateletta" and can only come up with things that might be translated as "flap" or something similar.
The term doesn't even exist in normal Italian dictionaries (even Sansoni, which usually gives me even the most unusual words).... has anybody any ideas?

I find it translated as flap in several sites and the images seem like flaps!

Hi Sarah, I think they are often used for extra protection on special clothing - in fact I only found it for "technical" stuff, like ski wear and jackets worn by firemen. Seems to keep the wind out around the collar wear the zip ends, stuff like that.
