Az emulgeálószerek olyan anyagok, amelyek elősegítik egymásban nem oldódó folyadékok (pl. víz és olaj ) egymásban való eloszlatását, azaz az emulzió létrehozását. Csökkentik a közötti felületi feszültséget, így a kisebb olajcseppek képesek úszni a vízben. Ezt az emulziót "olaj a vízben emulziónak" nevezik.
