乳化是指两种不相溶的液体形成乳状液的过程。乳化时通常需要加入第三种物质以提高乳状液的稳定性,这种物质称为乳化剂。最常见的乳化剂是表面活性剂。它一方面降低油水间的界面张力,使乳化作用易于进行;另一方面乳化剂在液珠表面上形成有一定强度的界面膜,阻止了液珠之间的聚结和油水分层作用,使体系更稳定。
