This is a first course on a set menu:

Bogavante y Ostras ***Semi-Frío*** “Mar y Tierra” Remolacha y Queso Mahon

Provisionally I have:
Lobster and oysters semifreddo “Mar y Tierra” beetroot and Mahon cheese

I'm not sure about this because "semifreddo" usually seems to be used to refer to desserts.

All I've found for semifreddo has to do with desserts. This is a seafood dish. They have cooked the lobster, refrigerated it, taken it out, and served it a little bit cold, that's how I read this.

The restaurant is supposed to be a sophisticated one. This is a first course, not a dessert. That's why I have doubts about "semifreddo", though based on the definition above "chilled" would appear to be an option. I think they may just be trying to squeeze in as many fancy terms as possible (regardless of whether they really fit).

What type of restaurant is this? If it's gastronomic it could be referring to a creative invention (something along the lines of Heston Blumenthal's bacon and egg ice cream).

In view of eski's very pertinent comments, maybe the asker should find out from the customer exactly what the dish (or list of dishes ) actually comprises.

Ross: in Spain cheese is a "postre" together with desserts. In my mind that "semi-frio" refers to the cheese with the beetroot which is served with the fish. In Spanish what margaret calls "semi-frio" is "templado". A semi-frio is a dessert.

I offered you "cool" for the real term for "semi-frío" is "lukewarm" or "tepid", which does not look good on a menu, but "cool" here vs "hot" lobster (which is the way it is most often served).

I disagree, Ross. If you asked for something "chilled" and it was given to you "semi-frío", you would NOT be happy. Just think of what a chiller is for!

This seems to suggest that "semifreddo" or "chilled" are the best options: Sp. semifrio [say-mee-FRAYD-doh; Sp. say-mee-FREE-oh] Italian for "half cold," semifreddo culinarily refers to any of various chilled or partially frozen desserts including cake, ice cream, fruit and custard or whipped cream. Such a dessert's Spanish counterpart is called semifrío.

I don't think it includes hot and cold foods, semi-frío is a little bit cold, not chilled, not cold, and not warm. I think it's room temperature, which by the way, when we speak of seafood, means we've removed it from the fridge a while before serving.

Hi Ross. I know that in French nuovelle cuisine there are preparations with fish (mostly crustaceans and shell fish) and "demi- froid", prepared with fruit (avocado, lime, lemon etc.). I am sorry I anly can come up with a hint. Chefs are creative and

I think Elizabeth is right. I think you'll need to find out exactly what the dish consists of, if possible. It's either some type of 'semifreddo' nouvelle cuisine creation, or it's literally 'half-cold', in which case 'warm' could be a possibility for a menu.

not necessarily. Could be some type of savoury 'semifreddo', which means chilled or partiallly frozen.

Menus are always tricky and a little poetic licence is acceptable. It may even be some kind of salad but best not to presume. "Mar" must be the seafood and "tierra" the beetroot". "Surf, turf and dairy" I guess sounds too much if we include the cheese.

I'd say the entire phrase is as follows, Ross:

Cooled lobsters and oysters, "Sea and Mountain" beetroot and Mahon cheese (quite a delicacy here in Spain). I really can't see any further complication! Menus, in good restaurants, have to be slight mysterious! (I was in food business for 23 years, I used to go to the best restaurants in Barcelona (Spain) and I don't think I've become obsolete yet!
