tournierte Kartoffeln

As far as I have been able to discover so far, the term 'tourieren' only seems to be used for pastry (primarily puff/filo pastry), but I can find nothing on the use of this technique with potatoes.

Tournieren ist eine Verfahren, mit dem beim Kochen das Zurechtschneiden von Obst, Gemüse, Kartoffeln und Eiern bezeichnet wird.

Das Wort hat seinen Ursprung im französischen tourner, das heißt drehen oder sinngemäß auch umrunden. Zum Schneiden benutzt man besonders geformte Tournier- bzw. Schälmesser oder Ausstecher. Die Produkte werden für die Garnierung und Dekoration von Gerichten verwendet.

sorry, forgot the English:
Wikipedia: Turning knives are also used to make a cut known as a tournée cut in vegetables such as carrots. These knives are curved and used to cut the potatoes into oval shapes. I think I would translate tournieren with "cut into shape with a turning knife"
