I've never heard of "spring chicken" used except in the "no spring chicken" sense, so I'd avoid putting it on a top quality menu. "Poussin" is what they sell over here, but are you sure it isn't "sauce poulette", as sophieb says? Sounds strange to me...

: 'poussin' is strictly speaking slightly different / As I understand it, even as used in EN, it is a baby chicken, i.e. younger still than a pullet

I agree that if this is in reference to the sauce then "spring chicken" wouldn't fit the context. If however, the "poulette" is being served as a dish on the menu I'd use "spring chicken" as this distinguishes it as a delicacy.
