Yes, Lucía, there are farmer's mkts in UK, and good butchers too, whom I'm sure will supply the boiling fowl (the name I knew, so my mother must have used them!), but I do my cooking in Spain!

Noni, don't they (meaning, in the UK) have farmers' markets or stores that sell only different kinds of fowl? How do you get the ingredients for Coq au vin in England?

IN UK English we don't talk about eating hen in terms of recipe names, whatever the bird's age, etc.; even if some people in the UK do know about the difference, you don't see boiling fowl for sale, though I suppose a good butcher'd supply them if asked.

But I can't see how we can use any of these terms for the tempting name of a dish - in the UK nobody knows the difference (sorry amigos!). Think we'll have to...

Gallina is what I buy to make stock. "Stewing chickens (also called hens, boiling fowl and fowl) usually range from 10 to 18 months and weigh from 3 to 6 pounds. Theyre more flavorful but less tender, and are best cooked with moist heat, such as in .."

Gallina as a food/ingredient is quite distinct from the generic "pollo" (for chicken), and many restaurant menus feature dishes with "gallina" seperately from thos with "pollo". I would use the "hen" (it's what my wife prefers and insists on)

When it's in a recipe, it's "chicken". When it's still running aroung the corral heckling away, it's "hen". I certainly would not eat "hen soup"!!

Sé que la mayoría de las recetas en inglés hablan de chicken, sin duda eso es cierto.

Pero se tiene que poder hacer la distinción cuando uno de verdad quiere utilizar una gallina vieja, hervirla mucho, y sacar un buen caldo (siempre va aser mejor que esperar a que se muera y darle sepultura).

He encontrado esta receta para Tortellini in Brodo- Tortellini in Broth, que habla de stewing hen.

I just remembered two expressions with chicken: a game called gallina ciega and pollo mojado meaning a coward.

hen stew filling

suggestion

a kind of pasta, filled with [ground] hen stew, and cooked in the stock from the stew;
hen can only be cooked in water/broth, its meat being too tough to be baked or broiled, so it is a stew
