Perché la pasticceria artigianale è arte del tempo, di "portare a maturazione" e a giusta combinazione sapori delicati e pieni di storia. È l’arte di trasformare la tradizione in qualità.

Hello could you help me with "portare a maturazione".

I'm not happy with my rendering and would like to change before I hand in at 3 pm. By the way it is on delicious "panettoni".

This is taken from a panettoone recipe: "At this point put it in a lightly floured bowl large enough for it to triple in volume, cover it with a heavy cloth, and keep it in a warm (85 F, 30 C) place for about 10 hours. "

ciao Dana, io credo che in questo caso la "maturazione" si riferisca alla "lievitazione" che per i panettoni deve essere lunga e lenta. HTH
