Select(形容詞)は選ばれた、つまり高級品を扱う店、と言うことで、英語でも通じる、というか英語をそのままカタカナにしたものだと思います。select group of peopleはいわゆるエリートです。ほかにも言い方はあると思いますが、原稿でセレクトといっているのを変えることも無いでしょう。

Specialty (i無しで)soteは専門店のことで、確かに別物です。たいてい専門店には高級品がありますが。
