I've checked the GDT, EuroDicAutom, my dicos, glossaries and done websearches. Before referring back to the client, does anyone out there have any idea? Is it referring to a technique? A type of machine?

As far as I know, from hiking around SAUMUR, it is a technics which allow the "cask" to be inclined little by little, thus saving impurities from passing into the bottles. They use a gin to lift the back of the casks.

This is a bit of a wild guess, Nikki, but my dictionary gives 'hoist' as one definition for chèvre. So, could it be a hoist they are referring to here??

The gravity-flow process would typically involve seven stories, as grape juice flowed from the crush to the fermenter to the barrel to the bottle. But the process can also be accomplished by using a fork lift to hoist the barrels and fermenters to the second story of the facility, then letting the wine run downhill into its next stage of processing. Hamacher believes the pumping process, especially when used on delicate Pinot Noir grapes, degrades the quality of the final product.

The GDT did give "derrick" for "ch�vre", which made me think of a sort of "tr�pied" with lifting tackle which might be used to raise the barrels to empty the wine off for bottling. However, as this wine is generally emptied by the opening of a small tap I am not sure. As a rule, the less you disturb the wine, the better it is!
