La frase original es "En esta actividad participan 100 empresas locales y 48 extranjeras, entre las que destaca LA_EMPRESA."

Mi interpretación:
At this activities, there are 100 local companies participating and 48 foreign, among whom BUSINESS (outstands/emphasizes).

Mi pregunta: ¿como puedo traducir mejor *destaca* = outstands o emphasizes?

I would just rephrase it to read as follows:

100 national and 48 companies from abroad, among them THE_COMPANY, are participating/participate/will participate in this activity.

I have the feeling that 'destacar' does not necessarily imply this emphasis. Also, I would not translate 'local' as 'local' but as 'national' as opposed to 'from other countries'. Last, but not least, it is not really clear whether THE_COMPANY belongs to the national companies or to those from abroad.
