The former emphasizes the fact that people all recognize the banker is a successful man, for he owns a number of banks, it's undoubted. The latter only indicates someone agree with the opinion, in an other word, hiding a fact that other people would not think he is a famous and successful banker.

Your translation of the sentence is correct.
There's a difference between the 2 phrases in question. literally translated , 人人都說 means "everyone says" (or almost everyone says), while 有人說 means "some say".
BTW, there's an extra 有 in your source that shouldn't be there: 所以人人都說他是有名的(有)銀行家
