I wanted to double check that the "su" here is referring to the Agency, ie "its activities".
I'm assuming the "los" is referring to the agents.
Many thanks in advance for your help.

The ie brackets aren't closed, so doesn't help, but I, too, agree with the asker's interpretation.
As it is unspecified whether XXX is a private individual > who, albeit unlikely, can still act as an Agency rather than an Agent, I am not hedging my bets on his, her or its, so - pending clarification - am opting for the 'former' rather than the 'latter' string of organización, entidad, bufete o empresa privada.

Yes, your interpretation is correct.
In the provided text, "su" refers to the Agency, indicating possession or association. So, "su actividad" means "its activity" or "the activity of the Agency."
And "los" is indeed referring to the agents. "Uno o más agentes de fútbol" translates to "one or more football agents," so "los agentes" means "the agents."
