Spanish term

confit

Spanish to English Social Sciences Cooking / Culinary
Hi.

I'm translating a menu and I have various references to items that have been confitado. I understand what a "confit" is, but when I have "tomated confitados" vs. "pato confitado" ... are they both "confit" -- as in "tomato confit" and "duck confit"? Or is "confited tomato" doable? I'm just wondering if there's any difference between confit and confited.

Thanks for the help!

I´ve been looking in internet, x confit and confited x seem to be the same. X confit is more frequently used. Hope this helps you!
Sandra Alboum (asker) May 7, 2006:
Thanks, but I understand the concept of confit (cooked and preserved in fat). My question is ... is there a difference between "X Confit" and "Confited X"?

agree Simon Bruni : I found a definition of Confit: "Meat (usually goose, duck or pork) that is slowly cooked in its own fat and preserved with the fat packed around it as a seal." Confit tomatoes are baked and then sealed in a jar with oil

agree Michael Burros : absolutely confit works for both

sugar plum

Confit means "sugar plum". Peharps confitado means "sweetened". (sweetened duck/sweetened tomato)

coated or preserved with sugar

Both "confit" and "confitado" come from the verb "confitar", which has the two above mentioned meanings. I would probably say "tomatoes preserved with sugar" and "duck coated with sugar".
