The entire sentence reads like this:
Many coffee professionals have done their own testing—spiking cups and roasting specific defects to observe the taste attributes.
We´re talking about methods to identify defects in coffee. None of the meanings which you could find for the word spike make any sense in this phrase. It´s not even clear to me if it´s being used as an adjective for cups or as a verb.

: The only problem I have with "adulterar" is that it could have a very negative meaning. Otherwise I agree with yr viewpoint. (Even if I am not totally sure about rulling out alcohol in this case...)
