I haven't found any examples/translations online. What occurs to me is "velocidad de descenso" but as the English term seems to be specific/specialized I assume there might be an equally specialized version in Spanish.

Así suene un poco coloquial lo de "rata", esa es la forma correcta de enunciarlo que yo conozco. Se expresa en pies/minuto. También hay "climb rate" rata de ascenso

"sink rate" es la medición del resultado de cuantos pies por minuto asciende o desciende una aeronave. No significa que esté cerca del suelo o que se vaya a estrellar. Esa medición se ve en el variómetro que se llama "climb rate indicator" pero que da señal para ascenso o descenso.
Caso 1
Multiplique el número de miles de pies a perder entre 3. La velocidad de tierra (GroundSpeed) entre 2 y luego multiplique por 10, obtendrá la rata de descenso ideal para un glide slope de 3 grados.
Ejemplo:
FL350 a FL100 => 25000 pies a descender (usaremos el número 25)
25 x 3 = 75 (el descenso iniciar a 75nm del objetivo)
GS= 320kts => ((320 / 2) * 10) = 1600 (1600 ft es la velocidad vertical ideal)

Espero esto te aclare, "rate of descent" o "sink rate" es lo mismo.
The rate of decrease in altitude is referred to as the rate of descent or sink rate. A decrease in altitude corresponds with a negative rate of climb.
Por eso dice en tu texto

Esto indica que hay sink rates que no son excesivas, simplemente normales
Glide path[edit]
On descent to landing, the sink rate is determined by the flap configuration and the power setting. Normally a 3° glide path is followed, with a sink rate that is proportional to the approach speed. All aircraft have a best glide configuration, a flap setting and speed (VBG) that will result in the longest unpowered glide distance.[2]
