Zarówno czekolada, jak i kakao są cennymi źródłami minerałów: m.in. miedzi, magnezu,
żelaza i fosforu. Ponadto zawierają one flawonoidy, które przyczyniają się do poprawy funkcjonowania
układu krążenia, a także działają przeciwutleniająco, ponieważ zwalczając wolne
rodniki w organizmie podnoszą siły witalne. Spożywanie czekolady `w ramach zbilansowanej
diety daje uczucie sytości i poprawę sprawności umysłowej, a także zmniejsza ryzyko
chorób serca i chorób krążenia. Po zjedzeniu czekolady we krwi podnosi się poziom serotoniny
i endorfin - naturalnych substancji znieczulających i redukujących stres, które są odpowiedzialne
m.in. za dobry nastrój. Nic więc dziwnego, że czekolada wzbudza apetyt na życie.
W połączeniu z naturalnie kandyzowanymi owocami czy chrupiącymi orzechami jest
źródłem łatwo przyswajalnej energii i stanowi prawdziwą eksplozję smaków.
Stosowana przez nas czekolada pochodzi od renomowanego belgijskiego producenta Barry Callebaut:
Czekolada ciemna o zawartości masy kakaowej ( miazga kakaowa i tłuszcz kakaowy) min. 47%, która świadczy
o wysokich walorach jakościowych i smakowych czekolady, niższej zawartości cukru i tym samym niższej kaloryczności.
Czekolada deserowa ma najbardziej korzystne działanie na organizm, ponieważ zawiera przeciwutleniacze.
Czekolada mleczna o zawartości masy kakaowej min. 32 %, udział składników potwierdza wysoką jakość i walory
smakowe czekolady. Jako ulubiony przysmak dzieci i młodzieży jest źródłem łatwo przyswalajalnego wapnia
(masa mleczna 13%) i energii.
Biała czekolada o znakomitym kremowym posmaku, wysokiej zawartości tłuszczu kakaowego 27% i mleka pełnego

Przydatne pojęcia:
Wolne rodniki (tlenu), oksydanty– powstają w wyniku reakcji metabolicznych w organizmie, pochodzą również ze
skażonego powietrza, dymu papierosowego, czy też długo przechowywanych produktów spożywczych. Mogą doprowadzić
do obniżenia odporności organizmu, chorób krążenia, zmian miażdżycowych oraz chorób nowotworowych
W efekcie wolne rodniki rujnują nam zdrowie i przyczyniają się do przedwczesnego starzenia się organizmu.
Do walki z wolnymi rodnikami służą antyoksydanty (przeciwutleniacze).
Działanie antyoksydacyjne (przeciwutleniające) - polega na unieszkodliwianiu wolnych rodników, a tym samym
- na ochronie komórek organizmu przed zniszczeniem. Najlepiej poznane antyoksydanty to witamina E, witamina
C i beta karoten, a także wymienione poniżej flawonoidy i antocyjany., które powszechnie występują w owocach.
Flawonoidy – występują tylko w roślinach, pomagają w przyswajaniu witaminy C, poprawiają przepływ krwi w naczyniach
wieńcowych i obniżają ciśnienie, działają przeciwalergicznie, przeciwgrzybicznie przeciwnowotworowo.
Antocyjany - barwniki roślinne występujące w czerwonych i fioletowych owocach, działają przeciwutleniająco
Nienasycone kwasy tłuszczowe – muszą być pozyskiwane z pożywienia (tu z orzechów), ponieważ organizm nie jest
w stanie ich wytworzyć. Niezbędny element diety o działaniu przeciwmiażdżycowym, wspomagający układ krążenia

Tanto il cioccolato quanto il cacao sono preziose fonti di minerali, ad esempio rame, magnesio, ferro e fosforo. Inoltre contengono flavonoidi, che contribuiscono a migliorare il funzionamento del sistema circolatorio ed hanno anche un effetto antiossidante in quanto, contrastando i radicali liberi nell’organismo, innalzano le forze vitali. Il consumo di cioccolato nel quadro di una dieta bilanciata dà senso di sazietà e un miglioramento delle capacità mentali, riducendo inoltre il rischio di malattie cardiocircolatorie. Dopo aver mangiato cioccolato, nel sangue si innalzano i livelli di serotonina e di endorfine, sostanze naturali che hanno effetti analgesici e di riduzione dello stress, e che fra l’altro migliorano l’umore. Non c’è da stupirsi che il cioccolato faccia venire voglia di vivere. Unito a frutta candita in modo naturale od a croccanti noci e nocciole, è una fonte di energia facilmente assimilabile e costituisce un’autentica esplosione di gusto.
Il cioccolato da noi usato proviene dal famoso produttore belga Barry Callebaut:
Il cioccolato fondente contiene una massa di cacao (polpa di semi di cacao e burro di cacao) minima del 47%, che testimonia degli elevati valori qualitativi e di gusto del cioccolato, di un contenuto inferiore di zucchero e, con ciò stesso, di un più basso potere calorico. Il cioccolato da dessert ha gli effetti maggiormente benefici sull’organismo in quanto contiene antiossidanti.
Il cioccolato al latte contiene una massa di cacao minima del 32%, con ingredienti che confermano l’alta qualità ed i valori di gusto del cioccolato. In quanto ghiottoneria preferita di bambini e ragazzi è una fonte di calcio (13% di massa lattea) e di energia facilmente assimilabile.
Il cioccolato bianco ha uno squisito retrogusto cremoso e un alto contenuto di burro di cacao (27%) e di latte intero in polvere (24% di massa lattea).
Concetti utili:
Radicali liberi (di ossigeno), ossidanti: si formano in seguito alle reazioni metaboliche dell’organismo e provengono pure da aria viziata, fumo di sigaretta, od anche prodotti alimentari conservati per troppo tempo. Possono portare a un abbassamento delle difese immunitarie dell’organismo, malattie circolatorie, sclerotizzazione dei tessuti e persino malattie neoplasiche. Di conseguenza i radicali liberi ci rovinano la salute e contribuiscono ad invecchiare anzitempo l’organismo. Per lottare contro i radicali liberi servono gli antiossidanti.
Effetto antiossidante: consiste nel neutralizzare i radicali liberi e, con ciò stesso, nel prevenire la distruzione delle cellule dell’organismo. Gli antiossidanti meglio conosciuti sono la vitamina E, la vitamina C e il betacarotene, insieme con i flavonoidi e gli antociani di cui sotto, che si trovano in tutta la frutta.
Flavonoidi: si trovano solo nei vegetali ed aiutano ad assimilare la vitamina C, migliorando la circolazione del sangue nelle coronarie e facendone scendere la pressione; hanno effetti antiallergici, antimicotici ed antineoplasici.
Antociani: pigmenti vegetali che si trovano nei frutti rossi e violetti, hanno effetti antiossidanti.
Acidi grassi insaturi: devono essere assunti con gli alimenti (nel nostro caso da noci e nocciole) in quanto l’organismo non è in grado di produrli. Elemento irrinunciabile della dieta, dagli effetti antisclerotici, rinforza il sistema circolatorio e molti processi metabolici dell’organismo.
