you can of course use a different word for each category 'old people's home, sheltered accomdation, halls of residence, etc. but what was asked for was "places in general", and "residencies" would suit very well if you want to avoid an unnecessary mouthful - digo yo

I don't think there is just one word for all of them.
for ancianos = old people's home
for estudiantes= halls of residence
for jóvenes = hostal or shelter or home depending on context.

For the elderly - "elderly care homes"/ "residential care homes"
For students (in the UK at least) they tend to be called "(halls of) residence"
