Yucca: manioc That is exactly what I suggested. "Chipá" is the name in Guarany. Maybe you could have said it was from Ecuador sooner. This bread is made and known in many Latin American countries, with slightly different names. But in English, you should write "yucca".

agree Sandra Holt : As far as I can see in Ecuador they use various types of starch for bread, i.e. potato, rice, yuca, etc. so Margaret's option is probably best unless they state what type of starch has been used.
