This is from a text from the 1920s text about Mexican architecture. Here, the writer is discussing the manual skills of Mexicans:

Lo mismo procuran y persiguen las manos morenas que pintan jarros y cazuelas, como las blancas manos virginales que, en provincia, deshilan los linos para el culto parroquial.

From what I can find, it refers to cutting and withdrawing warp or weft threads to create a decorative design, sometimes combined with embroidery.

I´m going to assume the girls would be working on altar cloths or vestments, etc.

Apparently, hand-drawn linen thread work is a specialty of Aguascalientes.
