notary public, partner

Francis is correct but I'd rather translate the job and add partner. This seems more elegant to me.

assistant notary

IMHO there is no reason to translate 'notaire' as 'notary public' - a notaire is more akin to a solicitor, but is not the actual equivalent of either a solicitor or a notary public. When translating a web site for a firm of notaires recently, I simply used 'notary' throughout (after one initial instance of using 'notaire' with 'or notary' in brackets after it). It was clear from the site that the actual 'partners' in the practice were referred to as 'notaires' tout court, and slightly lower in the hierarchy came the 'notaire associés'. Therefore, I translated that as 'assistant notaries', just as in a firm of solicitors, you have partners, assistants and trainees.
Peer comment(s):

neutral Nikki Scott-Despaigne : Except that an "assistant solicitor" is a qualified solicitor but not a parnter in a firm, whereas as "notaire associé" IS a partner.

disagree adjective : assistant would be "adjoint"; an "associé" is a partner, although it sounds quite clumbsy to talk about a notary partner.
