May be related to "tâte" and "taste-vin" or "tâte-vin"?

Wouldn't be at all surprised if the same word was used for those long metal tubes used for sampling cheese from the centre of a wheel.

platter (or cheese cellar) with three varieties of Roquefort

I think we're simply talking about a covered cheese platter of some sort used to present three varieties of Roquefort. Here's an example:

The Roquefort Société company sells slices of the cheese in specially designed plastic packaging actually called "cave".

Maybe dress it up by calling it a cheese cellar?

Thanks, Lionel! "Caves" in English seem to refer mainly to either a roquefort producer or an actual temperature-controlled cellar -- not the case here, IMO.
