Hospitality vets Anthony Potenzo, Lyle Aker and chef Matt Troost - the motley crew behind buzzy, rock 'n' roll-themed neighbourhood joint Three Aces - have certainly done a bit of growing up of late.

What does have done a bit of growing up mean here? Please rephrase it. Thanks in advance!

It means they have matured in some manner. I did not research the context to know "how" they have matured, however. Possibilities include:

1. That they have matured as far as the types of services they offer (offering better and more developed services);

2. That they have matured as human beings (that they no longer act like children or teenagers).

If they are a music group, their music may have matured as well (meaning that it is more serious or geared towards adult audiences).
