The term appears in some worksheets about food preparation, under the heading "thawing and slacking". I have an explanation for "slacking" in English (see below). Does anyone know the Spanish translation for it?
"Slacking" means the process of moderating the temperature of a food such as allowing a food to gradually increase from a temperature of -10°F (-23°C) to 25°F (-4°C) in preparation for deep-fat frying or to facilitate even heat penetration during the cooking of previously block-frozen food such as spinach.

Hola. One of New Shorter Oxford's entries for "slack" is: "b. Esp. of heat or the wind: not strong, gentle, moderate" and "reduce the force of intensity of...slow down". Mmmmm...I have found a few links featuring the phrase offered above. Here goes link 1 on "Descongelación de alimentos": "1. Descongelación lenta: en frigorífico, agua fría o temperatura ambiente. 2. Descongelación rápida: por calentamiento, cocción, fritura o microondas." Link 2 shows a few more pages using that phrase. I am not sure it's the really correct term for it but that's the idea anyway and I hope that at least it gets you onto the right track. I'll keep searching anyway just in case...Check links. (pre)calentamiento (gradual)

I don't know if there is a word, but I suggest:

precalentamiento

OR

(pre)calentamiento gradual

OR similar

This kind of trans conveys the idea of exactly what is done to the food. The literal and most typical meaning is totally inappropriate to convey this.
