In my opinion, though, the phrase really means "turn gold into cash." It does not matter if the cash is U.S. dollars, Japanese yen, or any other currency.

In the U.S., the word "green" means money because all the bills used to be printed with green ink until just recently when colors started to be introduced into the designs. Depending on your context, "green" might mean money in general or refer specifically to U.S. dollars.
