Dutch term

Uitpekelen

Dutch to English Science Cooking / Culinary
Not much context but a PP slide of factory cheese in a basin of water. The previous slide was describes as: Automatische inpekelen (pickled) and the following slide is described as: Automatische uitpekelen. I suppose it means lowering the pickling content (salt etc. by immersing the cheese in water), but what is the English term?

Discussion

Non-ProZ.com Nov 24, 2004:
Maybe the one to ask is the cheese factory? Why inpekelen and then uitpekelen in the original Dutch slides?
The job is long OTD....so I'm not going to wake up any sleeping dogs now.
MoiraB Nov 24, 2004:
No sour grapes at all ;-) but what the *!?$ does desalting actually mean? Why bother salting the cheese only to 'desalt' it? Makes no sense to me, but it's up to the asker after all...'
Non-ProZ.com Nov 24, 2004:
My final decision Although I has already awarded points, I had my doubts, so I consulted some of the sites mentioned. I finally went for "automatic desalting" for that slide because the previous one showed the cheese in the process of "automatic salting" (inpekelen).
seaMount Nov 24, 2004:
I agree with Kate(thanks to her discernment). My confidende level should have indicated incertitude. Reading through all the conveyed reference material, I cannot find such a desalination process for cheese. So, I agree with Moira as well! (gloss, -4?)
Kate Hudson (X) Nov 23, 2004:
I suspect you have chosen the wrong answer as my reading of this is that the cheese is automatically placed in the salt bath (inpekelen) and then likewise automatically removed from the salt bath (uitpekelen) - an answer suggested by one of the others

desalinate

... have to go ....
Volgens mij is het pekelen 'to brine'
Desalinate zou een optie kunnen zijn

removal from salt solution

just a guess. Doesn't seem to be part of the actual cheese-making process according to this job description:

Medewerker Natrijpingscel in Schoonrewoerd

Baaninformatie

Taken:
Het uitpekelen, transporteren, banderolleren, schmieren en plastificeren en afleveren van de kaas.

Not sure if 'pickling ' is the right term in cheesemaking. Find more hits for 'salt solution':
http://www.cheeselinks.com.au/howmade.html
Salting (the curds or cheese may be salted by adding salt or immersing the cheese in a salt solution, ie a brine)

agree writeaway : saw those refs too-it's simply hoisting the cheese out of the 'pekel'.

Thanks! Glad my brain's not completely pickled...

agree Joost Simons : Looks like that's what it means, yes. Instead of 'salt solution', 'salt bath' is also used a lot.

Peer comment(s):

neutral writeaway : is cheese pickled? pekel is a salt brine solution. none of your refs apply to context/oops-didn't notice the rating so will go back to neutral. but cheese isn't pickled afaik.

I don't see cheese among the list but you can pickle in brine, wasn't totally convinced either hence the "3" rating
