Aunque el fraseo original parece provenir de dos fuentes diferentes: "Solicito control de coagulación" (¿dicho por el cirujano?) y "tomo control de (exámenes de) coagulación" (¿saco sangre para control de coagulación? -¿dicho por enfermería?).

I've only found a few online documents that use the term in a similar contest to this question, and from what I've gathered it's possible that exs. is an abbreviation for 'exámenes'.
Example sentence:

Se digita el número de exs. por bolsa de sangre colectada

I think it could just be short for examenes, as seen here:

Exámenes De Coagulación :
Las pruebas de factores de coagulación son análisis de sangre que revisan uno o más de sus factores de coagulación para saber si usted tiene demasiado o muy poco factor de coagulación.
