Así escrito no está entre las onomatopeyas "canónicas", que yo sepa. Sonar, suena a gaseosa al abrirse.

Sospecho que podría tratarse de un error y en realidad debería ser "shhh", que se usa para hacer callar a alguien o para pedir silencio. Habría que tener el contexto donde aparece para saberlo con certeza.
